Used for seasoning and flavouring in a multitude of dishes, much ancient folklore also surrounds garlic; more commonly known for its ability to repel vampires, it was hung outside doors in Medieval Europe to stave off witches.
Nearly 3 million tonnes of garlic is produced globally per year; grown in a similar method to onions, garlic needs a period of 1 or 2 months of cold to force a high harvest. As well as its culinary uses, it has strong anti-viral, anti-bacterial and anti-fungal properties, and is useful for treating a number of complaints including digestive and bowel problems amongst others.
Uses
Garlic is used almost only ever as a seasoning in many dishes, ranging from stews, to curries and pasta.
It also has extensive non-culinary uses however, including many strong anti-viral, anti-bacterial and anti-fungal properties, much due to a chemical compound called allicin, which also gives garlic it's distinctive smell. It is useful in treating digestive complaints, bowel problems, and insect stings.
As part of the diet, garlic would seem to have an ability to lower blood cholesterol levels, and reduce the chance of a heart attack. It is also thought to be effective in reducing the chance of developing colonic and other types of cancer when included in a daily diet.
Growing Information
Garlic is relatively easy to grow and similar in cultivation to onions. They are grown from individual cloves, much as onions are grown from sets. For best results, cloves should be planted in late Autumn.
